Easiest Maple Syrup Cake

Can you have your cake and eat it too? Yes, you can if it’s this super easy Maple Syrup cake that gets baked in 35 minutes and reaches your plate in 45 minutes to enjoy. The motivation behind this quick cake is my husband with an insatiable sweet tooth. It’s the story of a lazy Sunday afternoon. Hubby dear had this sudden urge to have some delicious cake with the evening tea.

Feeling super lazy, I offered some half-baked excuses instead of a perfectly baked cake. The most substantial sounding one was that we were out of eggs. But to no avail! A cake had to be baked eggs or no eggs. Now I had never baked an egg-free cake before that day. So keeping my fingers crossed, I decided to experiment, using my somewhat limited knowledge of baking.

Maple Syrup Cake Highlights

Today, almost ten years later, I’m still glad that my husband urged me on to bake this yummy cake. What’s so special about it? Firstly, it has to be the ease of making it. The cake is mix-it-all-in-one -bowl kind of treat. Beating the liquids separately is not required which quickens the process.

It’s caramel sweet  and spiced flavor with light and moist texture makes it perfect for celebrating any occasion. It’s super straightforward to make with simple ingredients that are mostly pantry staple. It comes out perfectly delicious each time. If you have guests over, you can bake it fresh and serve even to custom eaters without a worry.

The Delicious Apricot Sauce

Now this is actually a bonus recipe that I’m sharing with you here. The cake tastes really good even without any topping or you can pair it with any topping of your choice – sugar glaze, fruit jams, golden syrup or streusel. You can also pair it with whipped cream, caramel sauce or chocolate ganache but, in my opinion, these would be a bit too heavy for such a light cake.

Coming back to our apricot sauce, it’s such a versatile fruit sauce to serve as a topping for tea cakes, toasts, biscuits and desserts. And at the same time makes a delicious dip for starters or condiment served alongside roasts, sausages and steaks. If making for savory dishes, just add a kick from crushed red peppers).  It comes together in minutes with just a few ingredients.

Apricot Sauce

    Directions

    Preheat oven at 175 degrees C. Mix flour, baking soda, baking powder, salt, garam masala and sugar in a big mixing bowl.

    Step1

    Add milk, vegetable oil, lemon juice, ginger, and maple syrup. Beat 1 minute at medium and 30 seconds at high speed.

    Step2

    Bake for 30-35 minutes or till a knife inserted in the center comes out clean and the top turns golden brown.

    Step3

    While the cake is baking, lets prepare the apricot sauce or you can even prepare it ahead and keep refrigerated. In a small saucepan heat 2 cups water.

    Step4

    Add dried apricots and let it simmer till the apricots are soft and water reduced to half.

    Step5

    Remove the apricots from syrup. When they are cool enough to handle, remove stones and add apricots back to the syrup.

    Step6

    Now add brown sugar, apple cider, salt and garam masala. Simmer to combine everything. You can leave the apricots chunky or puree the sauce in an electric mixer to make it smooth.

    Conclusion

    When the cake is cool enough to slice, spread the chilled or warm sauce over it.
